This recipe for a complete meal in a single pan couldn’t be much easier to pull together. Cast iron is ideal, but you can use any oven proof skillet.

Ingredients

  • 2 bone-in pork chops
  • salt
  • 1 small yellow onion, sliced thinly
  • 1 apple, cut into thin slices
  • 1 small green cabbage, cut into 12 inch strips or wedges
  • 1 tablespoon coconut oil, lard, or other cooking fat
  • 1 teaspoon dried sage
  • 1/2 cup bone broth
  • 1 tablespoon apple cider vinegar

Pork Chops with Cabbage and Apples

Ingredients

  • 2 bone-in pork chops
  • salt
  • 1 small yellow onion, sliced thinly
  • 1 apple, cut into thin slices
  • 1 small green cabbage, cut into 12 inch strips or wedges
  • 1 tablespoon coconut oil, lard, or other cooking fat
  • 1 teaspoon dried sage
  • 1/2 cup bone broth
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat oven to 350° F.
  2. Place ovenproof skillet (preferably cast iron) over medium-high heat. While skillet is heating, pat pork chops dry and then sprinkle on both sides with salt.
  3. Place pork chops in hot skillet and sear for about 4 minutes, then flip and sear for about 4 minutes on other side. Remove and set aside.
  4. In same skillet, heat fat then add onion and apple and cook, stirring constantly, for about 2 minutes, until soft and slightly browned. Add cabbage, dried sage, 1/2 teaspoon salt, bone broth, and vinegar. Cook for about 5 minutes, stirring continually.
  5. Place pork chops on top of cabbage in skillet and add any accumulated juice into the pan.
  6. Carefully place entire skillet in oven and roast for 15 minutes, or until chops are completely cooked through.
